I for one don't want this but I would like Microsoft to include a syslog
capability - either from EventLog - or an optional (turned off by
default for security even) service that would output events by syslog.

Whilst it has been stated that few sales are generated in *nix-based
data centres I think a lot of sales are generated in mixed *nix and
Windows environments.  Dictating to customers with those mixed
environments how they must do their logging doesn't seem like a value
add or providing good customer service.  Simply looks narrow-minded and
short-sighted.
